鶏肉： 一日前に味付けしたもののほうが美味

焼け具合は双方であまり変わりがなく、皮はパリっと身はジューシーに仕上がった。しかし、直前に味付けしたもののほうが皮部分に塩コショウが偏っており、若干しょっぱい。一方、一日前に味付けした鶏肉は香りもよく、味のバランスもピカイチ。


ラム肉： 一日前に味付けしたもののほうが美味

一日前に味付けしたラム肉のほうが直前に味付けしたものよりもずっと美味しかった。


牛リブ： あまり違いはない

牛リブ（肋骨部の肉）は、一日前に味付けしたものも直前に味付けしたものも、ほとんど違いはなかった。この実験に参加した他の試食者の評価も五分五分といったところ。


豚肉： 直前に味付けしたもののほうが美味

調理の直前に味付けした豚肉は肉汁たっぷりで美味しかったのだが、一日前に味付けしたものは身が乾いていて旨みが損なわれていた。
